Kibo Lentil Chips with Gluten Free Zucchini Fries


You will need two wide mouth bowls and 2 baking sheets (you can use only 1 if you stagger baking times).

Ingredients for Gluten Free Zucchini Fries

  • Zucchini – This recipe uses about 4 medium zucchinis.
  • Kibo Lentil Chips – You’ll need about 2 bags, or 1 cup of crushed chips for this recipe. You can use a food processor to chop up. the chips or simply place in a plastic bag and hit with a rolling pin until crushed into fine crumbs.
  • Grated Parmesan – Use pre-grated parmesan to make this recipe extra quick or grate your own.
  • Italian Seasoning – Your favorite brand will do!
  • Salt & Pepper
  • Eggs

What should I serve these Gluten Free Zucchini Fries with?

I recommend dipping them in your favorite marinara sauce (I highly recommend Raos Marinara). They would also be great dipped in lemon garlic aioli, ranch dressing or a creamy balsamic dip. Really the sky’s the limit!

Gluten Free Zucchini Fries

These delicious Gluten Free Zucchini Fries use a combination of crushed Kibo Lentil Chips, parmesan and spices for a quick and healthy snack!

  • 4 medium zucchini, halved and then quartered

  • 1 cup crushed Kibo Lentil Chips (about 2 bags)

  • 3/4th cup grated parmesan

  • 1.5 tsp Italian seasoning

  • 1 tsp salt

  • 1 tsp black pepper

  • 2 eggs

  • non-stick spray or olive oil (for coating the baking sheet)


  • Preheat the oven to 426 degrees F and prepare a baking sheet with nonstick spray or a light coat of oil.

    In a wide bowl, combine crushed Kibo Lentil Chips, parmesan cheese, Italian seasoning and salt & pepper.

    In another wide bowl add 2 eggs and whisk together until fully combined.
  • Assemble the zucchini fries by dipping each piece of zucchini into the egg mixture and then into the crumb mixture.

    Gently tap to remove any excess coating and place on the baking tray. Repeat with the remaining zucchini pieces, arranging on the baking sheet leaving about 1-2 inches of space between each fry.
  • Place the baking sheet in the oven and bake at 425 degrees F for 13-15 minutes until the zucchini fries are crisp on the outside and lightly golden.

    Remove from the oven and eat while hot. Serve with marinara sauce or a lemon garlic aioli if desired. Enjoy!
