Whole30 Mashed Potatoes

These fabulous Whole30 Mashed Potatoes are lactose free, gluten free and absolutely delicious! Using full fat coconut milk, ghee and spices, you won't even notice these are completely Whole30 compatible!

Equipment

  • Large pot
  • colander
  • Potato masher

Ingredients
  

  • 2.5 to 3 lb yukon gold potatoes, peeled and cut into large chunks
  • 3 tbsp ghee
  • cup coconut milk, full fat
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp truffle oil optional
  • salt & pepper to taste
  • fresh parsley, chopped optional

Instructions
 

  • Place potatoes in a large pot and fill with water until the potatoes are covered. Salt the water and bring to a boil over medium-high to high heat.
    Continue to boil until potatoes are tender (about 10-15 minutes depending on size of the potatoes). Drain and then pour back into the pot.
    In the warm pot with the cooked potatoes add ghee and mash to combine.
    Then add coconut milk, garlic powder, onion powder, salt & pepper. Mash with a potato masher until creamy.
    If using, add a teaspoon of truffle oil and stir to combine.
    Taste and add additional salt & pepper to preference. Enjoy!
