Pour ricotta cheese into a mixing bowl or stand mixer.
Using a handheld blender with whisk attachement or a stand mixer with whisk attachment, whisk the cheese for 2-3 minutes until light and fluffy.
Serve on fresh toast with preserves and sliced mint.
Notes
Whipped ricotta goes great on many things so feel free to get creative with it! Would also be great on toast with a little honey and a sprinkle of crushed pistachios.Â
