Brioche French Toast Casserole

Ingredients
  

  • 6 eggs
  • ¾ cup heavy cream
  • 1.25 cup whole milk
  • ¼ cup brown sugar
  • ¼ cup maple syrup
  • 1 tablespoon vanilla
  • 1.5 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoon melted unsalted butter
  • pinch of salt
  • 2 tablespoon cold unsalted butter, diced
  • 1 tablespoon turbinado sugar

Toppings (optional)

  • powdered sugar
  • maple syrup
  • fresh berries

Instructions
 

  • Butter a 12 x 9 baking dish. Then cut slices of brioche bread diagonally to get a triangle shape. Set aside.
  • In a large mixing bowl add 6 eggs and whisk together. Then add in brown sugar, maple syrup, heavy cream, whole milk, vanilla extract, cinnamon, nutmeg, 2 tablespoon of melted butter and a pinch of salt. Whisk together until well combined.
  • Dip each slice of brioche into the custard mixture, then tightly layer them in the prepared baking dish until all the bread has been used up.
    Pour any remaining custard over the top of the bread.
    Cover tightly and refrigerate at least 2 hours to overnight.
  • When ready to bake remove the casserole from the fridge and preheat the oven to 350 F.
    Evenly dot with the cold, diced butter then sprinkle on Turbinado sugar.
    Bake 40-45 minutes until the custard is set and the top is golden brown.
  • Serve warm topped with a sprinkle of powdered sugar, berries and maple syrup. Enjoy!
