Drizzle a little olive oil into a large Dutch oven or soup pot. Cook the Italian sausage, onion, celery, and carrots over medium-high heat until the sausage is browned and cooked through, breaking it up with a spoon as it cooks.
Add the garlic, red pepper flakes, and Italian seasoning and cook for 1 minute, stirring constantly until fragrant.
