For the Dressing
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1 tbsp fresh dill, finely chopped
- 1 tsp fresh mint, finely chopped
- salt & pepper
Salad Ingredients
- 1 English cucumber, quartered and thinly sliced
- 5-10 oz cherry tomatoes, quartered I prefer less tomatoes, add more if you are a tomato lover!
- ½ medium red onion, halved and thinly sliced
- ⅓ cup pitted Kalamata olive, cut in half
In a small mixing bowl, combine all dressing ingredients and whisk until well combined. (You can also add them to a jar, put a lid on it and shake until well combined).
Combine the remaining ingredients in a bowl. Pour the dressing over the vegetables and stir until well coated.
Serve immediately or allow to marinate for 30 minutes. Enjoy!
