Slightly sweet and tangy, this German style sweet and and sour cabbage is made in just a few hours in the slow cooker. It's a super simple, delicious and healthy dish the whole family will love!
1large red cabbage, quartered and slicedabout 2.5 lb
1large apple, cored, quartered and thinly sliced
1red onion, quartered and thinly sliced
¼cupapple cider vinegar
¼cupbalsamic vinegar
2tablespoonbrown sugaradd more or less to taste
½cupwater
1sprig of fresh thyme
1bay leafoptional
salt & peppr
1tablespoonbutteroptional
½lemon, juice of
Instructions
In bowl of a large slow cooker combine red cabbage, apple, red onion, apple cider vinegar, balsamic vinegar, brown sugar, a bay leaf, a sprig of fresh thyme and a generous pinch of salt and pepper with ½ cup of water. Stir to combine. Cook on high for about 3 hours (low 5-6 hours) until cabbage is very tender. Stir in 1 tablespoon of butter and the juice of ½ lemon. Season with salt and pepper to taste and serve.
