These baked cinnamon apples are everything I love about fall baking, simple ingredients, warm spices, and that buttery, comforting flavor that makes it impossible to stop at one bite. Serve them with ice cream, oatmeal, or straight from the pan for an easy treat that never disappoints.
Preheat the oven to 375 F. Place peeled and sliced apples in a large bowl. Add the juice of ½ lemon with ¼ cup of water and 1 teaspoon of vanilla extract. Mix to combine. Then add brown sugar, cinnamon, ginger, corn starch and a pinch of salt. Stir until well combined.
Pour apples into a large casserole dish. Top with pieces of cubed butter. Cover with foil and bake at 375 for 30 minutes. Then remove the foil and bake uncovered for an additional 10 minutes. Remove from the oven and allow to cool slightly before serving. Enjoy!
