    Baked Cinnamon Apples

    These baked cinnamon apples are everything I love about fall baking, simple ingredients, warm spices, and that buttery, comforting flavor that makes it impossible to stop at one bite. Serve them with ice cream, oatmeal, or straight from the pan for an easy treat that never disappoints.

    We go through a lot of apples in this house. My now nine-year-old son has been eating four a day since he was four (and I'm truly not exaggerating). So of course, these simple but oh-so-delicious baked cinnamon apples are always a hit around here.

    They're cozy, nostalgic, and remind me of the kind you'd find at a country restaurant or church potluck. I love serving them warm with a scoop of vanilla ice cream or a drizzle of custard, but they're just as good spooned over oatmeal or a slice of coffee cake. Hope you enjoy!

    Equipment

    For this recipe you will need a large casserole dish and foil (or a lid). I like using this 3 qt Stoneware Casserole dish from Le Creuset.

    Apples, lemon, butter cubes, vanilla extract, brown sugar, cornstarch, and ground spices—everything you need to make delicious baked cinnamon apples—are arranged on a white surface.

    Ingredients & Substitutions

    • Apples - I like using a mix of types of apples, from Granny Smith to Honey Crisp for a nice balance of sweet and tart. But you can totally just use what you have on hand.
    • Lemon - I use the juice of about half a lemon, which is approximately half a tablespoon. You can also use another citrus fruit such as orange or even a lime to mix things up a bit.
    • Vanilla - Vanilla extract or vanilla bean paste adds a little something to this dish. But feel free to omit if you prefer.
    • Spices - You definitely need cinnamon for this recipe, and I like to add ginger as well. You could also add some cloves, allspice, cardamom or nutmeg to really take things to the next level.
    • Brown sugar - Feel free to substitute with white sugar if preferred. You can also use maple syrup.
    • Corn starch - This helps to thicken the juices. You can leave out if preferred but it will come out a bit more liquidy.
    • Butter - I recommend using unsalted. You can substitute with a dairy free alternative.

    Serving Suggestions

    There are so many ways to enjoy these baked cinnamon apples. I love them warm straight out of the oven with a scoop of vanilla ice cream.

    They're also delicious spooned over pancakes, waffles, or French toast for a cozy weekend breakfast or brunch. Try adding them to your oatmeal or yogurt bowl during the week for an easy, homemade touch of fall.

    Can I use any type of apple for this recipe?

    Yes! I like using a mix of sweet and tart apples (like Honeycrisp, Fuji, or Granny Smith) for the best flavor and texture. Just note that softer apples will bake faster than firm ones.

    Do I need to peel the apples?

    That's totally up to you. I usually peel them for a softer texture, but leaving the skins on adds fiber and a rustic look.

    Can I make these without sugar?

    Yes. You can skip the sugar completely or replace it with some maple syrup, honey, or a sprinkle of your favorite sweetener.

    Can I make baked cinnamon apples ahead of time?

    Yes! Store them in the fridge for up to 4 days. Reheat gently in the microwave or oven before serving or eat them cold.

    Equipment

    • Large casserole dish

    Ingredients
      

    • 6 large apples, peels and sliced
    • ½ lemon, juice of
    • ¼ cup water
    • 1 teaspoon vanilla extract
    • ½ cup brown sugar
    • 2 teaspoon cinnamon
    • ½ teaspoon ginger
    • 1 tablespoon corn starch
    • pinch of salt
    • 3 tablespoon butter, cubed

    Instructions
     

    • Preheat the oven to 375 F.
      Place peeled and sliced apples in a large bowl. Add the juice of ½ lemon with ¼ cup of water and 1 teaspoon of vanilla extract. Mix to combine.
      Then add brown sugar, cinnamon, ginger, corn starch and a pinch of salt. Stir until well combined.
    • Pour apples into a large casserole dish. Top with pieces of cubed butter.
      Cover with foil and bake at 375 for 30 minutes. Then remove the foil and bake uncovered for an additional 10 minutes.
      Remove from the oven and allow to cool slightly before serving. Enjoy!
