Ingredients
  

For the Dressing

  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon fresh mint, finely chopped
  • salt & pepper

Salad Ingredients

  • 1 English cucumber, quartered and thinly sliced
  • 5-10 oz cherry tomatoes, quartered I prefer less tomatoes, add more if you are a tomato lover!
  • ½ medium red onion, halved and thinly sliced
  • cup pitted Kalamata olive, cut in half

Instructions
 

  • In a small mixing bowl, combine all dressing ingredients and whisk until well combined. (You can also add them to a jar, put a lid on it and shake until well combined).
  • Combine the remaining ingredients in a bowl. Pour the dressing over the vegetables and stir until well coated.
  • Serve immediately or allow to marinate for 30 minutes. Enjoy!
