Hot Reuben Dip

This baked Reuben Dip combines all the classic flavors of a reuben sandwich into the ultimate savory party snack! With corned beef, thousand island dressing, sauerkraut and Swiss cheese, this tailgate favorite is sure to have your guests coming back for more!

  • Measuring cups and spoons
  • 1 qt baking dish I recommend at 9.5 inch gratin dish

Ingredients
  

  • 8 oz cream cheese, softened
  • ½ lb corned beef, chopped
  • 1.25 cups sauerkraut, drained
  • cup Thousand Island dressing
  • cup sour cream
  • 1 tablespoon whole grain mustard
  • ¼ cup sour pickles, choppped
  • 8 oz Swiss cheese, diced or shredded

To serve (optional)

  • green onions, sliced
  • extra Thousand Island to drizzle

Instructions
 

  • Preheat oven to 400 degrees F.
    Add softened cream cheese to a large mixing bowl. Add in chopped corned beef, sauerkraut, Thousand Island dressing, sour cream, whole grain mustard, chopped sour pickles and about ¾ of the Swiss cheese.
    Mix until well combined.
    Pour the mixture into your baking dish and top with the remaining cheese.
    Bake at 400 degrees F for about 20-30 minutes until bubbly and cooked through.
    Top with sliced green onions and a drizzle of Thousand Island dressing if desired. Enjoy!
