    This baked Reuben Dip combines all the classic flavors of a reuben sandwich into the ultimate savory party snack! With corned beef, thousand island dressing, sauerkraut and Swiss cheese, this tailgate favorite is sure to have your guests coming back for more!

    It's no secret that we are big fans of all things "Reuben" so it only made since to pile those classic ingredients into the ultimate hot party dip. I love this recipe because it could not be easier to throw together and it hits all those delicious savory notes. You can make it in advance and simply bake right before serving. It pairs great with crackers, toasted rye bread, pretzels and fresh veggies. I love serving this as a tailgating or game day appetizer, for Thanksgiving and holiday parties and it's also perfect for St. Patrick's Day. Enjoy!

    Equipment

    For this recipe you will need:

    • Measuring cups and spoons
    • Baking dish: I like using my 9.5 inch 1 qt Le Creuset au Gratin dish.

    Ingredients

    • Corned beef: You can also use pastrami. I like mixing in shaved corned beef that's been chopped. But you can also use a thicker cut or even shredded corn beef if you prefer.
    • Cream cheese: I recommend using full fat for the best flavor and texture.
    • Sauerkraut: Be sure to drain the sauerkraut before adding!
    • Thousand Island Dressing: Use your favorite brand or homemade.
    • Sour cream: Full fat recommended for best results.
    • Wholegrain mustard: You can substitute with 1-2 tsps of dijon mustard if preferred.
    • Dill pickles: I like getting whole or quartered dill pickled and then chopping them myself, but you can use dill pickle relish in a pinch. Be sure to get a good quality pickle for the best results.
    • Swiss cheese: This recipe calls for sliced Swiss cheese that is chopped but you can also use shredded cheese.
    • Green onions (optional): For serving.

    What should I serve with this Reuben Dip?

    I recommend serving it with crackers, toasted rye bread, pretzels and/or fresh veggies.

    Can this Reuben Dip be made ahead of time?

    Yes, this dip can be prepared in advance. Simply assemble the dish as instructed, then cover with foil and store in the fridge 1-2 days ahead of time. When you're ready to serve simply remove from the fridge and bake according to instructions. You may need to add an additional 10-15 minutes to cook it through it baking straight from the fridge.

    Is this Reuben Dip recipe gluten free?

    This recipe can easily be made to be gluten free. Simply check your ingredients to make sure they don't include gluten, then serve with gluten free crackers, toasted bread and/or veggies.

    Can you make this recipe in a slow cooker?

    Yes, simply combine all ingredients as listed and cook on high for 2-3 hours, stirring occasionally until the cheese is melted and it's cooked through. You can keep the heat on warm to serve.

    How do I store this Reuben Dip?

    To store simply cover with aluminum foil and place in the fridge for up to 3-4 days.

    Hot Reuben Dip

    This baked Reuben Dip combines all the classic flavors of a reuben sandwich into the ultimate savory party snack! With corned beef, thousand island dressing, sauerkraut and Swiss cheese, this tailgate favorite is sure to have your guests coming back for more!

    Equipment

    • Measuring cups and spoons
    • 1 qt baking dish I recommend at 9.5 inch gratin dish

    Ingredients
      

    • 8 oz cream cheese, softened
    • ½ lb corned beef, chopped
    • 1.25 cups sauerkraut, drained
    • ⅓ cup Thousand Island dressing
    • ⅓ cup sour cream
    • 1 tablespoon whole grain mustard
    • ¼ cup sour pickles, choppped
    • 8 oz Swiss cheese, diced or shredded

    To serve (optional)

    • green onions, sliced
    • extra Thousand Island to drizzle

    Instructions
     

    • Preheat oven to 400 degrees F.
      Add softened cream cheese to a large mixing bowl. Add in chopped corned beef, sauerkraut, Thousand Island dressing, sour cream, whole grain mustard, chopped sour pickles and about ¾ of the Swiss cheese.
      Mix until well combined.
      Pour the mixture into your baking dish and top with the remaining cheese.
      Bake at 400 degrees F for about 20-30 minutes until bubbly and cooked through.
      Top with sliced green onions and a drizzle of Thousand Island dressing if desired. Enjoy!

      What a delicious and genius recipe. I love reuben sandwiches and putting the same ingredients and flavors into a hot dip was a fantastic yummy idea.
