    • Spices: I love using cinnamon, nutmeg, cloves, ginger and cardamom.

    • Unsalted butter
    • Vanilla extract

    What kind of apples should I use?

    I like to use a firm, slightly tart apple like Honeycrisp, Pink Lady, or Granny Smith, they hold their shape well and add a nice contrast to the sweet, spiced cake.

    Can I make this cake ahead of time?

    Absolutely. This cake actually tastes even better the next day once the flavors have settled. Store it covered at room temperature for 1-2s day or in the fridge for up to 4 days.

    Does this cake need a frosting?

    I like serving this cake on its own (without frosting) as a breakfast or snack that family loves. But this cake does pair beautifully with maple cream cheese glaze (recipe below) or you can also use classic cream cheese frosting, vanilla glaze, or just a dusting of powdered sugar for a simpler finish.

    Equipment

    • Mixing bowls

    • Sheet cake pan

    Ingredients
      

    • 2.5 cups all purpose flour
    • 2 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1.5 teaspoon ground cinnamon
    • 1 teaspoon ground ginger
    • ½ teaspoon ground nutmeg
    • ½ teaspoon ground cloves
    • ½ teaspoon ground cardamom
    • ¾ teaspoon salt
    • 8 tablespoon unsalted butter, melted
    • 1 cup brown sugar
    • ¾ cup white granulated sugar
    • 3 eggs
    • ⅓ cup sour cream I recommend full fat
    • 1 teaspoon vanilla extract
    • 2 cups unsweetened applesauce
    • 1 large apple, peeled and diced

    Cream Cheese Maple Glaze (optional)

    • 8 oz cream cheese, room temperature
    • 4 tablespoon maple syrup
    • 3 tsbp unsalted butter, room temperature
    • ½ cup powdered sugar
    • 1 teaspoon vanilla extract
    • pinch of salt

    Instructions
     

    • Preheat the oven to 350 degrees F.
    • In a large mixing bowl combine flour, baking powder, baking soda, cinnamon. ginger, nutmeg, cloves, cardamom and salt.
      In a separate bowl combine melted butter and brown and white sugar. Whisk to combine. Then add eggs and sour cream and whisk until well incorporated. Add in vanilla extract and applesauce, mix to combine.
      Add half of the dry mixture into the wet mixture and stir to combine. Then add the remaining dry mixture and stir until there are no white streaks of flour yet, being careful not to over mix. Then fold in the diced apple.
    • Line a sheet cake pan with parchment paper and prepare with butter and flour (or your preferred non stick baking spray).
      Pour the batter into the pan and then bake at 350 degrees F for 35-40 minutes until a toothpick inserted in the middle comes out clean.
    • Remove the cake from the oven and allow to cool in the pan for about 10 minutes, at which point you can carefully place a wire rack on top of the cake then carefully flip it over to remove from the pan.
      You can eat the cake warm or allow it to cool and add frosting or Cream Cheese Maple Glaze .

    To make the Cream Cheese Maple Glaze

    • Combine all glaze ingredients in a large mixing bowl or bowl of an electric stand mixer. Blend together until smooth.
      Pour or drizzle over the applesauce spice cake. Enjoy!

      This apple cake was amazing, it had so much flavor and my kids couldn't get enough of the icing. I actually air fried mine for about 20 minutes with the batter split into 2 smaller square cake pans. Definitely a keeper!

        Hi Jayme - Yes, you can make cupcakes with this batter. I haven't done so, so I'm not exactly sure on the timing. But I would probably bake at 350 for about 18-20 minutes and check for doneness. If it's not full baked add an additional 3-5 minutes. Hope this helps!
