    Irish Apple Crumble with Whiskey Cream

    This Irish Apple Crumble is an easy, beyond delicious dessert that is taken to another level with the addition of whiskey cream.

    One of the things I loved most about living in Northern Ireland was the prevalence of crumbles and crisps. While in the US crumbles, cobblers and pies are typically served with ice cream, in Ireland and the UK it is all about the creams and custards. And this Irish Whiskey Cream, ya'll it is worth it.

    A Grown Up Apple Crumble

    This grown up take on Apple Crumble infuses heavy cream with a decent dram of whiskey for amped up Irish flavor. The cream is meant to be very soft (no stiff peaks here) so it can take the full ¼th cup of whiskey.

    However, you can easily make a more child friendly version by simply leaving the whiskey out or doing a separate batch of whipped cream for the younger crowd.

    Equipment Needed:

    You will need 2 mixing bowls for the crumble as well as a 9 x 12 inch baking pan.

    For the whiskey cream you will need a mixing bowl and either a whisk, an electric hand mixer or a stand mixer with whisk attachment.

    Ingredients:

    • Apples: My favorite combo of apples for this crumble is a mix of Honeycrisp Apples and Granny Smith Apples. I think the tart and sweet combination works really well! But feel free to use your favorites and experiment with different varieties.
    • Fresh Lemon Juice: Feel free to use bottled lemon juice in a pinch. Just be sure to purchase a bottle that's only ingredient is lemon juice.
    • Cinnamon & All-Spice
    • White Granulated Sugar
    • All-Purpose Flour
    • Rolled Oats: You definitely want to use rolled oats and not steel-cut oats for this recipes. But the old fashioned and quick cooking kinds will work.
    • Brown Sugar: I typically use light brown sugar for this recipe but dark brown will work as well.
    • Butter: I prefer to use salted butter for most of my baking recipes, but of course unsalted works as well. Just give it a little extra pinch of salt when you mix up the crumble. If you want to get super authentic Kerrygold Butter is my favorite.
    • Salt
    • Heavy Whipping Cream
    • Powdered Sugar or Honey
    • Irish Whiskey: I highly recommend using an Irish or Scottish whiskey for this recipe. My personal preference is Jameson Irish Whiskey.

    Tips for a Perfect Irish Apple Crumble with Whiskey Cream

    Like most crumbles, this is a pretty forgiving recipe and can easily be changed to suit your personal tastes. Feel free to add more or less sugar, cinnamon and all-spice, and you can even add raisins if you like for a little change in texture.

    When softening the butter for the crumble topping you do not want to melt it completely but rather a very soft consistency. You want to be able to pinch it into the flour, oat and sugar mixture.

    The whiskey cream is not meant to be a stiff whipped cream but fall more into soft peaks. A traditional whiskey cream is meant to be pourable, but not totally liquid.

    Ingredients

    • For the Apple Crumble
    • 3.5 lb apples (about 6 large), I recommend a mix of Granny Smith & Honeycrisp Apples

    • ½ lemon, juiced

    • 1 teaspoon cinnamon

    • 1 teaspoon all-spice

    • 1 tablespoon all-purpose flour

    • ⅓ cup white granulated sugar

    • 1 cup all-purpose flour

    • 1 cup rolled oats

    • ⅔ cup brown sugar

    • ½ cup butter, softened

    • 1 tablespoon cinnamon

    • 1 teaspoon all-spice

    • pinch of salt

    • For the Whiskey Cream
    • 1.5 cup heavy whipping cream

    • ⅓ cup powdered sugar (can replace with 2-3 tablespoon honey if desired)

    • ¼ cup whiskey, I recommend Jameson

    Directions

    • Preheat oven to 375 degrees F.

      Peel & core apples then cut into ¼th inch slices. Place in a large mixing bowl and add the juice of ½ lemon, 1 teaspoon cinnamon, 1 teaspoon all-spice, 1 tablespoon flour and ⅓rd cup sugar. Mix to combine and set aside.
    • In a medium mixing bowl, combine 1 cup flour, 1 cup oats, ⅔rd cup brown sugar, 1 tablespoon cinnamon, 1 teaspoon all-spice and a pinch of salt. Stir to combine. Add in ½ cup of softened butter and using your hands pinch the butter into the flour mixture to combine until you get a soft, crumbly texture.
    • Prepare a 9 x 12 inch baking pan with a little butter and flour and pour in the apple mixture. Sprinkle the crumble in an even layer over the top.

      Bake at 375 degrees F for around 40 minutes until golden brown.
    • Make the Whiskey Cream
    • Pour 1.5 cups heavy whipping cream and ⅓rd cup powdered sugar into the bowl of a stand mixer or a mixing bowl. Using a hand whisk or electric mixer gently whisk the cream until soft mounds form. You don't want stiff peaks for this recipe. The cream should be thick but still pourable.

      Add in whiskey and fold to combine.
    • Serve the Apple Crumble with a Large Dollop of Whiskey Cream and Enjoy!

    Notes

    • This recipe can easily be doubled or even tripled to feed a crowd.
