    Peanut Butter and Jelly Granola

    This simple and oh so delicious Peanut Butter and Jelly Granola upgrades classic flavors for a breakfast and snack the whole family will love!

    Granola is staple in our household. Once I realized how easy it is to make I was never going back to store bought. This PBJ flavored version combines jam and peanut butter as both flavoring and binder for the recipe. I love using strawberry jam for this recipe but you can use your favorite flavor.

    This recipe makes a fantastic breakfast, brunch or snack and is delicious served with yogurt or on ice cream. Hope you love it as much as we do!

    Equipment

    • Mixing bowl
    • Measuring cups and spoons
    • Parchment lined baking sheet

    Ingredients

    • Old fashioned oats: I recommend using good quality old fashioned oats, not the quick cooking kind. They are coated with flours and can effect the texture.
    • Oat bran: You can order Bob's Red Mill Oat Bran on Amazon or find it at most Sprouts and Whole Foods. I really brings this granola together so I don't recommend leaving it out.
    • Salted peanuts: You can use unsalted if you prefer but I like the added seasoning.
    • Jam: My favorite jam to use is strawberry but feel free to use a jam of your preference.
    • Peanut butter: I recommend using Justin's Honey Peanut Butter.
    • Honey: You can substitute with maple syrup if you prefer.
    • Raisins: You can substitute with dried cranberries if you prefer.
    • Olive oil: You can use coconut oil if preferred.
    • Vanilla Extract
    • Salt

    Tips & Tricks for great granola

    • Don't break it up too much. The little clumps are delicious.
    • Make sure to stir half way through cooking. This way you ensure the edges don't burn and become bitter.
    • Make sure you let it cool before storing. If you put it in jar or airtight container while it's still hot it can trap moisture and make the granola soggy.

    Get creative with the ingredients.

    This granola recipe is very forgiven and can be adjusted to suit your personal tastes. Feel free to use a jelly or jam of your choosing. You can use almond or another nut butter instead of peanut butter.

    You can even add some freeze dried strawberries after baking to amp up the fruity flavor.

    How do I store the granola?

    Allow the granola to cool completely before storing in an airtight container at room temperature. It should last 4-6 months.

    Ingredients
      

    • ¼ cup peanut butter
    • ¼ cup strawberry jam or another flavor of your choice
    • 2 tablespoon honey
    • 2 tablespoon olive oil Can substitute coconut oil
    • 1 teaspoon vanilla extract
    • 2 cups old fashioned oats
    • ½ cup oat bran
    • ½ cup salted peanuts, chopped
    • ½ cup raisins

    Instructions
     

    • Preheat the oven to 325 degrees F.
      In a medium sized microwave safe bowl combine peanut butter, strawberry jam, olive oil, honey and vanilla extract.
      Microwave for around 30 seconds then stir until well combined.
    • In a large mixing bowl add oats, oat bran, peanuts and raisins. Pour the peanut butter mixture over the oat mixture and stir until well combined.
      Then pour the mixture onto a parchment paper lined baking sheet and spread out.
      Bake at 325 degrees F for 10 minutes. Then stir the mixture around and bake for another 10 minutes.
    • Remove from the oven and allow to cool completely before storing in an airtight jar or container.
