    Simple & Healthy Weeknight Meals

    As work has started picking up again and the kids are back in sports my evenings of long, leisurely pandemic cooking have definitely come to an end.

    Which is why I love simple recipes that use fresh, healthy and clean ingredients put together in just the right way to give you optimum flavor with little effort. This is one of those recipes!

    This recipe is also dairy free, gluten free, soy free, Paleo, Keto and Whole30 compliant. Everyone can enjoy!

    Whole30 Chipotle Lime Chicken with Cucumber Avocado Salad Pure Flavor Mini Cucumbers

    Why Choose Pure Flavor®?

    This is my second recipe collaboration with Pure Flavor® and I have got to tell you I am just so impressed with the quality of their products. These Mini Cucumbers are no exception!

    We are bigtime cucumber lovers here in the Flight household and honestly there is nothing better in the summer than a fresh, crisp cucumber. I could seriously eat a whole bag of these things in one sitting and my 2 year old has been devouring slices of them with her lunch every day since we got our delivery.

    They work beautifully in this recipe because of their crunchy texture and fresh flavor. They also hold up well, releasing very little moisture so the salad doesn't get soggy quickly, which is key!

    Equipment

    You will need a nonstick skillet and a medium sized mixing bowl for this recipe. You also may want to get a meat mallet or rolling pin to pound out any thick parts of the chicken for more even cooking.

    Ingredients for Whole30 Chipotle Lime Chicken with Cucumber Avocado Salad

    • Pure Flavor® Mini Cucumbers
    • Avocado: You want your avocado to be slightly firm for this recipes so that it retains is structure.
    • Lime: You'll use the zest for the chicken and juice for the salad.
    • Garlic
    • Fresh Cilantro
    • Chicken Breast: I always recommend buying organic chicken if possible. It really makes a difference in both flavor and nutrition.
    • Chipotle Powder
    • Onion Powder
    • Garlic Powder
    • Paprika 
    • Olive oil: Other compliant oils such as avocado oil also work.
    • Salt & Pepper

    What is Whole30?

    Whole30 is a Paleo-esque, 30 day elimination diet that focuses on replacing processed, inflammatory foods with whole, nutrient dense options. While on Whole30 you avoid eating added sugars, alcohol, grains and gluten, legumes, dairy and harmful added chemicals.

    Whole30 Chipotle Lime Chicken with Cucumber Avocado Salad

    This Whole30 Chipotle Chicken with Cucumber Avocado Salad is fresh, healthy and delicious dinner that comes together in less than 30 minutes!

    Ingredients

    • For the Chipotle Lime Chicken
    • 1 lb chicken breast (2 large)

    • zest of 1 small lime

    • ½ teaspoon Chipotle powder

    • ½ teaspoon Onion powder

    • ½ teaspoon Garlic Powder

    • ¼ teaspoon Paprika

    • 1-2 tablespoon olive oil

    • For the Cucumber Avocado Salad
    • 4 Pure Flavor® Mini Cucumbers, halved and sliced

    • 1 large, slightly firm avocado cut into ½ inch pieces

    • 1 garlic clove, crushed

    • ½ cup chopped fresh cilantro

    • juice of 1 lime

    • salt & pepper

    Directions

    • Take the chicken out of the fridge and pat dry with a paper towel.

      Place a sheet of parchment paper over the chicken and use meat mallet or rolling pin to gently pound the chicken to an even thickness. *Note: You do not want to make it super thin, just flatten some of the thicker parts so that it cooks more evenly.*
       
      Set aside for 5-10 minutes and allow to come to room temperature while you prepare the salad. 
    • In a medium size mixing bowl, combine Pure Flavor® Mini Cucumbers, avocado, garlic, chopped cilantro and the juice of 1 lime until combined. Be careful not to over mix. Add salt & pepper to taste. Set aside.
    • In a small bowl, combine the zest of 1 lime with salt, Chipotle powder, onion powder, garlic powder and paprika and mix to combine.
       
      Sprinkle the spice mixture on both sides of the chicken breasts, covering as evenly as possible.
    • Add 1-2 tablespoon of olive oil to a skillet and heat over medium-high until hot and shimmering.

      Gently place the chicken breasts in the pan. (You should immediately hear a sizzle. If you don’t the pan is not hot enough)

      Cook for 4-5 minutes undisturbed, then flip and cook for an additional 4-5 minutes or until the thickest part of the meat   reaches an internal temperature of 165 degrees F.
       
      Remove from the skillet and allow to rest for at least 5 minutes before slicing.
    • Serve the chicken topped with cucumber and avocado salad. Enjoy!
