    Easy Grilled Bell Peppers

    Grilled bell peppers are one of my favorite easy dishes. They're sweet, smoky, and go with just about everything. They look beautiful on the table and taste even amazing fresh off the grill. Great as a side on their own or tossed into sandwiches, salads, and more!

    These grilled bell peppers are proof that sometimes the most delicious recipes are also the simplest. When bell peppers hit peak season in the summer, grilling brings out their natural sweetness while adding just the right amount of smoky flavor.

    I especially love piling them into toasted ciabatta sandwiches with a little cheese or grilled chicken. They're also fantastic tossed into salads, layered into wraps, or served as an easy side dish alongside grilled meats. And if you want to take them over the top, a drizzle of aged balsamic or fresh chimichurri is always a good idea. Bright, colorful, and incredibly versatile, grilled bell peppers are one of those summer staples I come back to again and again.

    Equipment

    • Grill and grill tongs: We love our Charbroil grill and Oxo grill tongs. We pretty use them weekly!
    • Cutting board and sharp knife

    Ingredients

    • 4 large sweet bell peppers: Red, orange and yellow work best. Green peppers are much less sweet.
    • Olive oil
    • Sea salt & black pepper

    Step by Step Instructions

    Time needed: 15 minutes

    How to Grill Bell Peppers.

    1. Preheat the grill and prepare the bell peppers.

      Preheat grill over medium high heat for about 5-10 minutes until hot.

      Slice bell peppers in half and remove the stems, seeds and pith with a sharp knife.

      Brush olive oil on both sides of the pepper using a basting or pastry brush, or simply rub on with your hands.

    2. Grill the bell peppers.


      Place the bell peppers cut side down onto the preheated grill. Cook on medium heat undisturbed with the lid closed for 4-5 minutes.

      Flip to the other side and grill with the lid closed for an additional 4-5 minutes until the peppers are cooked al dente with a nice char.

    3. Season and serve!


      Transfer the peppers from the grill to a foil line pan (optional) or plate.

      Season both sides with a little sea salt and fresh cracked black pepper.

      Serve drizzled with a little aged balsamic or chimichurri. Enjoy!

    Dietary and Lifestyle Information

    These grilled bell peppers are naturally gluten free, dairy free and soy free.

    They are Whole30 and Paleo compatible and great for those on Keto or low carb diet or for those following the 2B Mindset program.

    Serving Suggestions

    I love drizzling a little aged balsamic vinegar on these peppers straight off the grill. They are also delicious with some fresh Chimichurri!

    Recipe FAQs

    Do I need to peel bell peppers after grilling?

    Not unless you really want to. The skin gets soft and slightly charred while cooking, which adds great flavor. But if you prefer a smoother texture, you can peel them once they've cooled.

    Can I grill bell peppers ahead of time?

    Yes! They keep well in the fridge for up to 4-5 days. Store them in an airtight container and enjoy cold or reheated.

    What colors of bell peppers are best for grilling?

    Red, yellow, and orange peppers are sweeter and great for grilling. Green peppers are a bit more bitter but still work well if that's the flavor you like.

    Ingredients
      

    • 4 large sweet bell peppers
    • 4 tablespoon olive oil
    • sea salt
    • fresh ground black pepper

    Instructions
     

    • Preheat the grill over medium to medium high heat for 5-10 minutes until hot.
    • Prepare the peppers by slicing them in half then removing the stems, seeds and pith.
      Brush both sides of the bell peppers with a little olive oil.

      I just want to let you know how much we enjoyed this peppers. We grilled up a batch to serve as a burger topping for the 4th of July, and it really made for a gourmet burger without a ton of effort.

      Takes longer to cook than noted. Perhaps my pellet grill is slower at 375 degrees. Maybe 15 minutes on the first side.
