    These Roast Beef Sliders are a breeze to make and packed with flavor, thanks to a zesty horseradish and green onion sauce layered with melty provolone cheese. Perfect for busy weeknights, potlucks, or holiday parties, they come together quickly and deliver big on flavor without much fuss.

    These Roast Beef Sliders are one of those recipes that just always works. I'm a big fan of horseradish and when you layer it into a punchy green onion sauce, top it with thinly sliced roast beef, and melt provolone cheese over the whole thing...it honestly doesn't get much better.

    I make these all year long for quick and easy weeknight dinners, but they really shine during the holiday season when you need something delicious and stress-free for potlucks, parties, or family gatherings. Come football season, these sliders are a must-have for tailgates and Super Bowl spreads. My husband swears they're even better the next day, crisped up in the air fryer, which makes them perfect for meal prep and leftovers.

    Equipment

    • Baking sheet or other rectangular pan
    • Small bowl and pastry brush: I love this silicone pastry brush set from Amazon.
    • Aluminum foil

    Ingredients

    • Hawaiian rolls: I recommend Kings Hawaiian rolls.
    • Deli roast beef: I recommend using shaved roast beef but you can have it cut to the thickness your prefer.
    • Sliced provolone
    • Mayonnaise: I recommend using full fat, good quality mayo.
    • Sour cream: Full fat and ideally cultured sour cream has the best flavor.
    • Prepared horseradish: I really like Bubbies Prepared Horseradish.
    • Green Onions
    • Butter: I love using Kerrygold salted butter.
    • Fresh garlic
    • Worcestershire sauce
    • Wholegrain mustard: You could also use dijon mustard if preferred.
    • Onion powder
    • Garlic powder
    • Poppy seeds

    Recipe FAQs

    Can I make these sliders ahead of time?

    Yes! You can assemble the sliders a few hours in advance and refrigerate until ready to bake. When you're ready, just pop them in the oven as directed.

    Does this recipe reheat well?

    Yes! We love meal prepping this for lunches. The best way to reheat it is either in the air fryer or the oven covered with foil on a low setting. If you microwave it they tend to get a little soggy.

    How hot are these roast beef sliders?

    They do have a subtle kick from the horseradish but this can be adjusted to taste.
    For a hotter slider you can add additional extra hot horseradish and/or a pinch of cayenne.

    What's the best bread to use for sliders?

    Soft rolls like Hawaiian rolls are perfect. They hold up well to the filling, stay fluffy, and toast beautifully in the oven. If you can't find any you can use dinner rolls, mini brioche buns, soft potato rolls or other pull apart rolls.

    Equipment

    • baking sheet or pan
    • pastry brush
    • Aluminum foil

    Ingredients
      

    • 1 package Hawaiian rolls, 12 pack
    • ¾ lb roast beef, shaved or thinly sliced
    • 9 slices of provolone cheese
    • ⅓ cup mayonnaise
    • 2 tablespoon sour cream
    • 2 tablespoon prepared horseradish
    • 3 tablespoon green onions, thinly sliced
    • ¼ cup unsalted butter, melted
    • 1 garlic clove, crushed
    • ½ tablespoon Worcestershire sauce
    • 1 teaspoon wholegrain mustard can substitute dijon
    • ½ teaspoon onion powder
    • ½ teaspoon garlic powder
    • 1 tsp poppy seeds
    • salt and pepper

    Instructions
     

    • Preheat the oven to 350 degrees F.
      In a medium size mixing bowl combine mayonnaise, sour cream, horseradish and sliced cream onions. Stir to combine and season with a pinch of salt and pepper to taste.
    • Slice the Hawaiian rolls in half lengthwise.
      Lay the bottom half of the rolls on a baking sheet or pan. Spread about half of the horseradish mixture evenly over the rolls.
      Then top with the roast beef and layer on the provolone cheese.
      Spread the remaining horseradish mixture onto the top half of the rolls and place on top.
    • In a small mixing bowl combine melted butter, garlic, Worcestershire sauce, mustard, onion powder and garlic powder. Stir to combine then brush the butter mixture over the top of the rolls.
      Sprinkle on poppy seeds and cover with foil.
      Bake at 350 degrees F for 30-35 minutes until the cheese is melted and the sliders are golden brown.
      Serve warm and enjoy!
