This whipped ricotta toast is so quick and simple to make! It's a perfect breakfast, brunch or snack that your family will love!

I honestly feel a bit silly for writing this up into a blog post because it is such a simple thing to make but when I posted a picture of some whipped ricotta toast that I made on instagram the other day the people went nuts for it. And for good reason! Because whipped ricotta toast is the bomb y'all. And yes, I still refer to great things as "the bomb".
You can put whipped ricotta basically any kind of toasted bread with any kind of jam or preserves, but I personally prefer it on fresh sourdough with my homemade cherry butter. I mean, can it get any better?

What is ricotta cheese?
Ricotta is a type of Italian cheese made from whey leftover in cheese production. Ricotta is creamy, surprisingly fresh tasting and absolutely perfect for desserts!
You can find ricotta in the cheese aisle at most grocery stores. I highly recommend using full fat ricotta for this recipe (and all others) as the reduced fat options do not have the same texture and flavor.

Equipment
For this recipe you will need a mixing bowl and whisking device.
You can totally whip your ricotta with an electric hand mixer, or stand mixer but I really love this Bella immersion blender with the whisk attachment. You can throw the whisk attachment straight into the dishwasher and I just find it to be so convenient. Especially if you don't already have an immersion blender (which I highly recommend) this is a good one to get.
Serving Suggestions
I love spreading this whipped ricotta on top of a freshly toasted piece of sourdough bread and topping with cherry or blackberry preserves and some fresh mint.

Whipped Ricotta Toast
Ingredients
- 1 cup Ricotta cheese I prefer whole milk ricotta
- toast
- Jam, fruit butter or preserves
- Fresh mint, sliced (optional)
Instructions
- Pour ricotta cheese into a mixing bowl or stand mixer.
- Using a handheld blender with whisk attachement or a stand mixer with whisk attachment, whisk the cheese for 2-3 minutes until light and fluffy.
- Serve on fresh toast with preserves and sliced mint.
