Absolutely! Simply multiply the ingredients by how many servings you need and follow the rest of the instructions as written.
This recipe is very simple to make gluten free. Simply make sure that the cornmeal you use to thicken the soup is gluten free or you can skip this step all together. And be sure to select gluten free tortilla chips for the topping.
While I would not consider this soup to be super spicy, there is definitely a little kick to it.
If you prefer you can amp up the spice level by adding in few diced jalapenos when you cook the onions and bell pepper.
If you prefer a milder soup you can even replace the diced tomatoes and green chiles with Red Gold Diced Tomatoes (with no added chiles) or reduce the amount of chili powder.

Chicken Tortilla Soup
Equipment
- Large soup pot
- Measuring cups and spoons
Ingredients
- 1 tbsp olive oil
- ½ cup onion, diced
- 1 small green bell pepper, diced
- 6 cups chicken broth
- 2 cups shredded chicken approximately 1 rotisserie chicken
- 2 14.5 oz cans Red Gold Petite Diced Tomatoes with Green Chilies
- 1.5 cups frozen corn, thawed
- 1 15 oz can black beans, rinsed and drained
- ¼ tsp black pepper
- pinch of salt
- ½ tsp garlic powder
- 1 tsp chili powder
- 1 tsp cumin
- 3 tbsp tomato paste
- 3 tbsp cornmeal, mixed with ½ cup water optional
Toppings
- tortilla chips
- shredded cheese
- fresh cilantro optional
- diced avocado optional
Instructions
- In a large soup pot heat olive oil over medium high heat until hot. Add in diced onions and bell peppers and cook for 3-4 minutes until tender.
- Add in black pepper, garlic powder, chili powder, cumin, tomato paste and a pinch of salt and cook for another minute or so stirring constantly.Then stream in chicken broth and add diced tomatoes, corn, black beans, the cornmeal mixture and shredded chicken. Bring to a boil the turn the heat down to low and simmer for about 20 minutes, stirring occasionally.
- Remove from the heat and taste. Add addition seasoning (salt) if needed and then serve into bowls. Top with tortilla chips, sour cream, shredded cheese and any other toppings you desire. Enjoy!
