I absolutely love a good themed dish, and this Thanksgiving charcuterie board might just be one of my all-time favorites. Shaped like a festive turkey with a red pear "body," this board is as charming as it is delicious, and the best part is how flexible it is. You can use whatever meats, cheeses, and fruits you have on hand and really let your creativity shine as you design the "feathers." As long as you have the turkey body, the rest becomes your own edible work of art. I like to serve it with plenty of crackers, sliced bread, and a selection of preserves and honey for the perfect holiday appetizer.

Equipment
For this recipe I recommend using a large round charcuterie board. You can adjust the size based on how many people you want to feed.

Ingredients
- Red pear - This is for the turkey body. You can use any color of pear but I like the look of the red pear.
- Carrot - This is for the turkey's legs and beak. You could also use a turnip, parsnip or anything else that you can carve easily.
- Mini chocolate chips - I use these for the eyes and stick them on with a dab of peanut butter. But you could use dried fruit or even candy eyes.
- Charcuterie meats - I like using prosciutto, salami and pepperoni, but your favorite charcuterie meats will work.
- Selection of cheese - I like having a goats cheese (the one I use here is covered in dried blueberries), a sharp cheddar, a mild cheese and a creamy cheese such as brie You can use your favorites.
- Nuts - Walnuts, pistachios and pecans works great. But use what you love.
- Fruit - I recommend grapes and an assortment of berries and dried fruits.
- Herbs - Totally optional but I think a few sprigs of fresh rosemary take this to another level. Thyme also works well.
How to make a salami rose.
To make a salami rose, grab a small glass, something like a shot glass or a small juice glass works perfectly.
Start by folding one slice of salami over the rim so that half of it hangs inside the glass and half stays outside.
Keep layering more slices around the edge, overlapping each one slightly as you go to create that petal effect.
Once you've gone all the way around (usually about 10-12 slices), gently press the layers down with your fingers, then flip the glass upside down onto your board and lift it off to reveal a beautiful salami rose. It's such an easy little trick that instantly makes your charcuterie board look extra fancy!

Thanksgiving Charcuterie Board
Equipment
- Large round charcuterie board
Ingredients
- 1 red pear
- 1 large carrot
- 2 mini chocolate chips
- ⅛ teaspoon peanut butter
- 4 oz blueberry goat cheese
- 7 oz wheel of brie
- 8 oz variety pack cheese tray selection (cheddar, swiss, Monterey jack, etc.) Or another cheese selection of your choice.
- 4 oz salami
- 5 oz pepperoni
- 3 oz prosciutto
- 1 bunch of grapes
- 1 cup blueberries
- ½ cup dried cranberries or other dried fruit
- ½ cup walnuts, pistachios or other nuts
To Serve
- Crackers and crostini
- Jams, honey and spreads
Instructions
Create the turkey body.
- Slice a red pear in half lengthwise and place it near the bottom center of your board with the cut side down. Use two small carrot slices to make the turkey’s feet, and cut a small triangle of carrot for the beak. Dab a tiny bit of peanut butter on the back of two chocolate chips and press them in place for eyes.
Build the base layer.
- Starting right above the pear, fan out thin slices of pear to form the first layer of feathers. This creates a nice shape to guide the rest of your design.
Add your cheeses.
- Cut a variety of cheeses into triangles or wedges. Arrange them in alternating colors around the top half of the board to form the "feathers."
Add meats and create texture.
- Fold or roll slices of salami, prosciutto, and other cured meats. You can make a salami rose by pressing overlapping salami slices around the rim of a shot glass, then flip it onto the board and lift the glass to reveal the rose (more detailed instructions above). Layer the meats between the cheeses, alternating for a full, feathery look.
Fill in with fruit & nuts.
- Tuck in clusters of red grapes, blueberries, and dried cranberries for pops of color. Add nuts like walnuts for crunch, and use sprigs of fresh rosemary to fill in any gaps and give the board a festive, “feathered” look.Enjoy!

Beautiful! You might want to use a dab of cheese to attach chocolate chips ( turkey eyes) instead of peanut butter. Just might be a peanut allergy among guests and they might be not expecting peanut butter on this fun appetizer board.
