    This simple sheet pan roasted tomato gnocchi is absolutely packed with flavor and takes only a few minutes to throw together! Featuring Pure Flavor Sangria Medley Tomatoes, gnocchi, fresh herbs and parmesan cheese, this is an easy weeknight meal you will make again and again.

    School is back in session and I am constantly on the hunt for delicious dinners I can get on the table fast. This Sheet Pan Roasted Tomato Gnocchi requires such minimal effort for a fabulous result. Simply combine fresh gnocchi with tomatoes, shallots, olive oil and seasonings on a sheet pan and pop in the oven. Then serve with shaved parmesan cheese and fresh basil. And that's it! Seriously. It couldn't get easier or more delicious.

    All you will need for this recipe is a chopping board and knife and a parchment lined sheet pan.

    • Shallot
    • Olive oil
    • Italian seasoning
    • Onion powder
    • Garlic powder
    • Fresh parmesan
    • Fresh basil
    • Black pepper

    Is this recipe easily doubled or tripled?

    Yes, this recipe is great for feeding a large group and can easily be doubled or even tripled. Simply increase the amount of each ingredient and follow instructions as written.

    Can I add other vegetables to this recipe?

    You can but I recommend using veggies that cook quickly alongside the tomatoes and gnocchi. Zucchini and asparagus are great options.

    Serving Suggestions

    I love serving this recipe with a big salad. If you want to make it extra indulgent you could top the roasted gnocchi and tomatoes with a large burrata.

    Sheet Pan Roasted Tomato Gnocchi

    Equipment

    • parchment lined baking sheet

    Ingredients
      

    • 1 lb fresh gnocchi
    • 2 pints mixed cherry tomatoes
    • 1 shallot, chopped
    • 1 teaspoon Italian seasoning
    • ½ teaspoon onion powder
    • ½ teaspoon garlic powder
    • ½ teaspoon salt
    • 2 tablespoon olive oil
    • 2 garlic cloves, crushed

    To serve:

    • fresh basil, sliced
    • flaky sea salt
    • parmesan cheese
    • fresh black pepper

    Instructions
     

    • Preheat the oven to 450 degrees F and line a baking sheet with parchment paper.
    • Mix together olive oil, salt, onion powder, garlic powder, Italian seasoning and garlic. Spread gnocchi, tomatoes and chopped shallot out on the baking sheet then pour on olive oil spice mixture and use your hands to incorporate. Bake at 450 degrees for 25 minutes.
    • Remove the sheet pan from the oven and pour the roasted gnocchi onto a serving dish. Top with a drizzle of olive oil, fresh basil, shaved parmesan cheese and cracked black pepper. Enjoy!

      My family loved this! It was so quick and easy with very fresh, well-balanced flavor. I had never tried gnocchi on a sheet pan before and it may just be my new favorite way to enjoy it. Thanks for sharing.

      I had some cherry tomatoes that were about to go bad, so I used them to make this tomato gnocchi. This recipe was quick, simple, and delicious! I will definitely be adding it to my dinner rotation!
