    Whole30 Mashed Potatoes

    These fabulous Whole30 Mashed Potatoes are lactose free, gluten free and absolutely delicious! Using full fat coconut milk, ghee and spices, you won't even notice these are completely Whole30 compatible!

    During my first round of Whole30 in 2017 I'll admit I was skeptical about the use of coconut milk in mashed potatoes. But y'all, it works!

    The key is the balance the amount of ghee and coconut milk necessary for creamy mashed potatoes with the addition of spices and seasoning to mask any residual coconut flavor. I love using garlic and onion powder to do this but my favorite trick is adding just a little but of white truffle oil. It not only makes the potatoes decadent, but masks any hint of coconut. Huzzah!

    What is Whole30?

    Whole30 is a Paleo-esque, 30 day elimination diet that focuses on replacing processed, inflammatory foods with whole, nutrient dense options.     Equipment

    • Large pot
    • Colander
    • Potato masher: I highly recommend using a potato masher to mix these potatoes by hand, rather than using a hand blender or other electronic option. You will get a far better consistency doing it by hand!

    Ingredients

    • Yukon gold potatoes: In my opinion Yukon gold potatoes are by far the best potatoes for mashing. But you can also use russet potatoes or other starchy potatoes.
    • Ghee: Ghee is basically clarified butter and it is the only dairy based product allowed on the Whole30 program. While these potatoes are not totally dairy free or vegan, they are lactose free and should work for most people with dairy sensitivities. I recommend 4th & Heart Ghee.
    • Full fat coconut milk: I highly, highly recommend using full fat coconut milk for this recipe. Low fat versions won't give you the same consistency and often have an unpleasant aftertaste.
    • Onion powder
    • Garlic powder
    • Salt & pepper
    • White truffle oil (optional): I love adding truffle oil to my mashed potatoes but especially on a round of Whole30 as they completely mask any residual coconut flavor. My favorite is Truffle Hunter White Truffle Oil.
    • Fresh parsley (optional): For garnish

    Other toppings and mix ins

    Fresh basil and truffle. One of my favorite ways to serve these mashed potatoes is with fresh basil and truffle. I can't even tell y'all how good this combo is and so decadent. I love serving it with my Whole30 Pork Tenderloin with Balsamic Caper Pan Sauce.

    Bacon and parsley. Another fun version of these potatoes is to add in chopped, crispy bacon and parsley. Delicious!

    Nutritional Yeast. If you are craving a "cheesy" feel to your mashed potatoes try adding some nutritional yeast. Just make sure you choose a brand with Whole30 compatible ingredients!

    Tips and tricks for perfect mashed potatoes

    1. Don't undercook or overcook the potatoes. I know this is probably easier said than done but you definitely want to keep an eye on the texture of the potatoes throughout the cooking process. Cook them too little and there will be hard chunks in the mash, overcook them and you'll end up with a very sloppy mash. You want them just tender enough to be mashed with the back of a fork.
    2. Keep the potatoes hot. You do not want to let your potatoes cool before mixing in the rest of the ingredients. Drain them in a colander and then immediately transfer back to the warm pot and add mix-ins. If you are making ahead of time mash everything up before storing in the fridge.
    3. Use a hand masher. It may be tempting to speed up the process and throw a hand blender in there but I promise you will regret. Over mixing the potatoes messes with the starches and results in a less than pleasant consistency.
    4. Taste and season constantly. Great mashed potatoes are all about proper seasoning. If you feel like something is missing, it's probably salt. Add a little more, taste and see what you think.

    Equipment

    Ingredients
      

    • 2.5 to 3 lb yukon gold potatoes, peeled and cut into large chunks
    • 3 tablespoon ghee
    • ⅓ cup coconut milk, full fat
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • 1 teaspoon truffle oil optional
    • salt & pepper to taste
    • fresh parsley, chopped optional

    Instructions
     

    • Place potatoes in a large pot and fill with water until the potatoes are covered. Salt the water and bring to a boil over medium-high to high heat.
      Continue to boil until potatoes are tender (about 10-15 minutes depending on size of the potatoes). Drain and then pour back into the pot.
      In the warm pot with the cooked potatoes add ghee and mash to combine.
      Then add coconut milk, garlic powder, onion powder, salt & pepper. Mash with a potato masher until creamy.
      If using, add a teaspoon of truffle oil and stir to combine.
      Taste and add additional salt & pepper to preference. Enjoy!

      WOW! I have made whole30 compliant mashed potatoes before and they weren't that great. But these .. these are the BEST mashed potatoes I have ever tried. I did not have truffle to add, but I added everything else the recipe called for.
