    The fun and delicious Antipasto Eyeballs are so simple to throw together and are perfect for your Halloween gatherings. A spooky and tasty snack, the only ingredients needed are mozzarella balls, green olives and prosciutto to make your Halloween charcuterie board pop!

    I loved themed food, and Halloween themed food above all! Not only are these spooky eyeballs delicious, they look absolutely fantastic on a Halloween charcuterie board or as a stand alone snack. Just 3 simple ingredients make this low carb recipe the perfect Halloween bite!

    Halloween party menu ideas

    Every year we host a Halloween trick or treating party at our house and after several years I feel like I've mastered the perfect Halloween menu.

    I tend to shy away from serving any sweets knowing that the kids will soon be gorging themselves on candy and stick with warming, hearty food and salty snacks to contrast the chocolates.

    Every year I make a big batch of Green Chicken Chili and put out a variety of toppings such as shredded cheese, sour cream, jalapenos and tortilla chips. For the adults I also do a big snacking charcuterie board that include these Antipasto Eyeballs as well as my Sweet & Spicy Skeleton Bone Appetizer and Mummy Brie .

    For the kids I make my delicious bite sized Hot Dog Spiders (we like these better than the mummy hot dogs) and mini Spider pizzas. And I serve everything with plenty of fruits and veggies to keep things balanced!

    Equipment

    All you need for this recipe is a cutting board and a sharp knife.

    Ingredients

    • Mozzarella balls: Also called bocconcini, you'll need small mozzarella balls for the eyeballs.
    • Prosciutto: Thinly sliced prosciutto is wrapped around the mozzarella balls for a ghoulish look.
    • Green olives: I recommend using pimento stuffed green olives, but if you prefer you can used garlic stuffed or blue cheesed stuffed olives instead.

    To Serve:

    I like to serve my Antipasto Eyeballs on top of fresh basil leaves with a drizzle of good quality olive oil, balsamic glaze and a sprinkle of flaky sea salt and freshly cracked black pepper.

    Antipasto Eyeballs

    Equipment

    • cutting board and a sharp knife

    Ingredients
      

    • 16 small mozzarella balls Also called bocconcini
    • 8 slices prosciutto
    • 8 pimento stuffed green olives, cut in half

    To serve (optional)

    • good quality olive oil
    • balsamic glaze
    • flaky sea salt
    • fresh basil leaves

    Instructions
     

    • Prep your ingredients by cutting the olives in half and cutting each slice of prosciutto in half lengthwise.
      Drain the mozzarella balls and use a small paring knife to cut out a small piece of the cheese at the top. (Just enough to fit the olive into).
      Carefully wrap the slice of prosciutto around the mozzarella ball (cut side up) then carefully fold back the top of the prosciutto to secure it.
      Place ½ an olive into the center of each ball.
      Finish off with a drizzle of good quality olive oil, balsamic glaze and a sprinkle of flaky sea salt. You can also place each eye on basil leaf before serving if desired.

        Yes! Just wrap them tightly with plastic wrap and set out at least 15 minutes before serving to come closer to room temperature.
